Waffles are a delicious treat that can be enjoyed at any time, but they are particularly perfect for weekend mornings. The best weekend vegan waffle recipe is one that is easy to make and full of delicious flavors. This oatmeal banana cinnamon waffle recipe is just that!

This is my go to vegan waffle recipe I make almost every weekend and I batch cook them, so we have plenty leftovers for the week! You can adjust the ingredients to change up the flavor or load it with your favorite toppings! Don't like waffles, well then make pancakes instead. They are kid approved, perfect for breakfast or on the go as a snack and freeze really well! Ready? Let's go!


Why homemade waffles?

Well, store bought waffle or pancake mixes are vegan, but they can often be high in added sugar, sodium and other additives. This recipe is made with simple, whole food ingredients that you probably already have in your pantry. Home cooking has been shown to be not only healthier, but also more affordable than eating out or buying pre-made vegan breakfast foods.

Whole Food Highlight - Rolled Oats

Rolled oats are SO versatile with many nutritional benefits that I get excited to talk about them. They are a good source of fiber, vitamin B1, and minerals such as manganese, phosphorus, magnesium and zinc. Oats are also high in antioxidants and have anti-inflammatory properties which can help protect cells from damage.


Per the USDA, 1 cup of rolled oats provides almost 8 grams of fiber, 5 grams of protein without any added sugar, sodium or cholesterol!


Whole grains, such as oats, have also been shown to be beneficial in reducing the risk of heart disease, diabetes, obesity and great for your gut microbiome.

Here are some of my favorite ways to use

rolled oats -



  • Oatmeal (our go to breakfast during the week). You can make quick overnight oats; batch cook an instant pot full of oats for the week or make baked oatmeal which is great to eat as a snack as well!
  • Oat flour for homemade baked goods - think cakes, cookies, brownies, snack bars and more!
  • Savory oat dishes like risotto or breakfast hash
  • Blend them into a smoothie
  • Burgers and patties
  • Make homemade oat milk 

So, what does this mean for our vegan waffles?


Well, oats are a high-quality, vegan source of protein and fiber which can help keep you feeling full and satisfied after eating. They also add a nice flavor and texture to the waffles. Be sure to use old-fashioned or rolled oats, not quick oats, in this recipe as they will cook more evenly.


In the market for a new waffle iron? I highly recommend the Cuisinart double Belgian waffle maker . It will not disappoint!

The best part of this vegan waffle recipe is you can change up the flavors or toppings depending on what you are feeling that day. You can also add your favorite protein powder if desired. Berries, bananas, other fruit, seeds (hemp, flax, pumpkin), nuts or nut butter, & coconut flakes just to name a few!


My French-Canadian husband of course loves maple syrup on his! And my kiddos love dessert waffles with homemade ice cream and Enjoy Life mini chocolate chips (they are vegan!)

Equipment

I would recommend using a powerful blender like the Vitamix A3500 Ascent Series Blender (My favourite!) to make the batter smooth and to help create those perfect waffle pockets.

If you don't have a waffle maker, no problem! Just use a pancake griddle and cook until golden brown on each side.


Prevent sticking

I recommend spraying a little bit of oil on your waffle iron or girdle to prevent the waffles from sticking.


Recipe

Oat & Banana Cinnamon Waffles

Oat & Banana Cinnamon Waffles

Serves: 4

Prep Time: 5 Minutes

Total Time: 20 Minutes


What You Need:

3 cups organic rolled oats

2 medium bananas

1/2 tsp cinnamon

1/2 tsp baking powder

1-2 tbsps maple syrup

splash of apple cider vinegar (1/2 cap)

pinch of salt

2 cups plant-based milk

What To Do:

  1. Turn on your waffle iron or girdle. Spray with a bit of oil.
  2. Blend the oats in a high-speed blender until it turns into a flour.⁣
  3. Add all other ingredients and blend. You may need to use a tamper or spatula to mix it up a bit to allow it to blend. ⁣
  4. The mixture will thicken up while sitting so use splashes of milk as needed to thin out the batter.
  5. Add batter to warm waffle iron or girdle.
  6. Serve hot with favorite toppings and enjoy! ⁣
